Hi Miriam,
If you want to lighten your vinaigrette or just vary it, you can just add a little water, or add yogurt or cottage cheese, lemon juice, salty soy sauce, replace the oil with tahini or almond puree.
I really like the seasonings of chef Ottolenghi who often mixes yogurt with tahini, a clove of crushed garlic and the juice of a lemon. We can add all the spices we want, it’s delicious! Of course, adapt to what you want season!
